Joe and Chee stumble upon a chili farm and meet some farmers who appear to be very dirty and unhygienic. While it was clear, they were no ordinary farmers. Dark Winds Season 3 hinted that the farmers were a ruse for a sinister cult, probably Tom's illegal racket.

Leaphorn and Chee stumble upon a Chili farm in Dark Winds Season 3 Episode 3
While Joe Leaphorn and Chee struggle with their ongoing investigation about Ernesto's death and George Bowlegs' whereabouts, the lieutenant finally spots a Yé’iitsoh. While Joe is unsure what the thing is, it confirmed that George is alive and looking for them.
Their search took them to a location where they spotted a red pickup truck, which was also present near Ernesto's murder scene, and it was the first breakthrough for the duo in this case. Upon investigation, they found that the pickup truck belonged to Halsey and his wife, Suzanne, the leaders of a chili farm.
Upon reaching the farm, Joe and Chee suspect that there is more to this place and its people than meets the eye and that Halsey is maybe running something sinister under the guise of a farm. All the 'farmers' were dirty and wore ragged clothes.
They appeared to be in a sinister cult and were afraid to speak up in front of Halsey, even his wife, Suzzane. However, Joe was sure that they were somehow related to Ernesto's murder and George's disappearance.
The farm leader in Dark Winds Season 3 Episode 3 is likely connected to Ernesto's murder
While Halsey denied having any connection to Ernesto or George, Suzanne finally came around and revealed that the duo often visited their farm. She also revealed that George took a liking to Suzanne, which did not sit right with her husband, Halsey, who had a violent temperament.
In Dark Winds Season 3 Episode 3, Joe learns from Suzanne that Halsey took the red pickup truck and disappeared on the night of Ernesto's murder. While she did not confirm anything explicitly, she suspects that Halsey had something to do with his murder, and he used the truck to dispose of his body.
While this information gave Joe enough authority to raid Halsey's compound, he was one step ahead of the duo. Joe and Chee discovered that Halsey's compound was empty, and he also drugged Suzanne for snitching against him and ran away in his truck.
The duo also found Bernadette Manuelito and other patrol officers' photos in the farm's barn, hinting that Halsey and the farmers might somehow be related to Tom Spenser's human trafficking operation.
Since Bernadette Manuelito is onto Spenser in Dark Winds Season 3, it would make sense for these 'farmers' to keep a record of these patrol officers, who might prove to be obstacles in their human trafficking operation. If that really is the case, Bernadette might be in danger now that Halsey has escaped, and he might contact Tom to alert him about Joe and Chee.
