Chef Kim Do-yun is a White Spoon Chef in the Culinary Class Wars show on Netflix. The Michelin 1-star winner chef leads the culinary team at Yun Seoul. Self-taught, Chef Kim began cooking in 1992, having developed a new appreciation for employment and cooking after experiencing hunger in his early days living alone.
The White Spoon star chef in the Netflix show Culinary Class Wars, Kim Do-yun, is known for his mastery of noodles and a strange quirk of keeping a pantry, more like a laboratory, full of the ingredients he collects. He keeps over 500 ingredients put away in lines by their year of production. These include origin pickles, dried vegetables, beans, grains, seeds, dried meat, and dried fish, some as old as seven years.

Kim Do-yun from Culinary Class Wars has been cooking for 32 years, and his interest in learning about ingredients that allow for the different characteristics and textures of Korean food continues to grow.
Many of his recipes involve dry curing, not only beef and duck but also fish and a variety of mushrooms. Chef Kim Do-yun of Yun Seoul finds inspiration in 18th-century dishes and incorporates what he considers necessary into his creations. This can also be seen in Netflix’s show Culinary Class Wars.
For example, he spent most of his time collecting wheat samples from the countries he visited during his travels to France, Turkey, Italy, and even the various provinces of Korea, which was a necessity for his noodles.
Kim never went to culinary school; instead, he learned to cook by working in various restaurants in Korea since 1992. His restaurant serves a variety of Korean noodle dishes, as well as fish and beef dishes.
Kim is currently on a mission to introduce noodles with its unique scent. Sharing his vision with the Korea Herald, he said,
“In South Korea, the majority of noodle makers put additives to noodles so they all taste similar, without a signature scent. I hope to open a noodle store in the future, first starting with mass-producing such noodle within the first half of this year,”

Kim Do-yun from The Culinary Class Wars has devised a special recipe that enhances the taste and aroma of his noodles. The uniqueness comes from roasting soybeans and mixing them with mung beans and whole wheat flour.
The self-taught chef's background includes hands-on experience in several Japanese, Italian, and French restaurants in Korea. Kim believes that the beauty of Korean food comes from the time involved in its preparation similar to fine wine, rushing the process doesn't give the same depth of flavor. He believes that slow, dry aging creates a uniqueness not found elsewhere, and this is his approach to cooking.
Kim also hopes to set up a research laboratory and museum of ingredients for various Korean dishes within five years.
“Like Spain’s restaurant-turned museum elBulli1846, my dream is to have a venue to research and archive Korean food culture, I want to showcase the history of Korean food ingredients and demonstrate the diversity of Korean cuisine."
