Founded in March 1990, the first Zaxbys was established in Georgia, near the Georgia Southern University campus by childhood friends Zach McLeroy and Tony Townley. However, it took the company four years to open their first restaurant outside Georgia, when they opened one in Kentucky in 1994. That combined with the franchising system saw the company grow rapidly and by 2013, they had moved across the United States with outlets across Utah.

As of 2024, the company announced plans to expand across America in 2025 with a store in Maryland and several others planned across the Eastern Shore of Maryland.
